Beautiful Day for a Hike

Wow, today was an amazing day! So nice out, feels like early spring. After battling the damn flu for the last two weeks, I finally got out in the open air and did some hiking. My daughter had a two hour snowboard lesson at Mt. Baker, so I used that time to enjoy the sun.

I had a great time and took in the beautiful views. Luckily, I didn’t cough all the way up and down the mountain, but it was a challenge considering I have been inactive for three weeks. This week I am feeling well enough and more than motivated to do some running and my barre dvd.

I have Resurfaced!

Last time I wrote a post I finally went on a road run. Since then, we have been super busy. When my husband comes home for 3 weeks, he is home and we kind of go on vacation. Now that he is back to work for 3-4 weeks, I am getting back to a schedule. When he was home, we did all sorts of fun stuff! We went camping on the Olympic Peninsula at Salt Creek Rec Area. Such a fun time!

ImageAt Salt Water Creek Rec Area, we got to go tide pooling, which was awesome! We saw a bright red octopus, sea anemone’s, star fish, and tons of other little sea creatures!

ImageImageImageImageImageImageImageWe truly had a great time. I love spending time on the beach exploring and listening to the sounds of the waves.

We also went to the Honda Celebration of Light in Vancouver, B.C. and the Vancouver Aquarium. What an amazing event! The fireworks display was like nothing I have ever seen before. It was so cool to join the thousands of people on the waterfront and enjoy such an exciting event. Luckily the hubs has a cousin who lives there, so we can park at her place and wander around town without having to worry about parking in town.

We went to Seattle a few times. The first time, we went to drop off my brother’s dog at his apartment then I seriously can’t remember what we did after that. Senior moment. On Friday, we went to the Washington Arboretum and walked around the park. It was so nice and warm.

Yesterday, we went to Padilla Bay to walk the shore trail. That was okay, wasn’t quite what I was expecting. But I did find a place to take my daughter on her bike and I can run the 4.5 mile round trip.

Okay, so overall, my training has been in the dumps. I have been doing well with weight training, but running isn’t working out so well. I have still been dealing with tummy issues and it has been draining my energy levels. I have an appointment on the 22nd to try and figure out what is going on. So far, if I completely ixnay gluten, grains, and corn I feel okay. As soon as I add them in, my stomach goes haywire. I can run a few miles, but then I start to cramp up and I feel like I am being stabbed in the rib cage like I ate too much before running. I tried to run today, but I just couldn’t. I did .3 miles, and said FUCK THIS! I had my little tantrum and I will try again later or tomorrow. This is my first day of taking gluten, grains, and corn off my eat list for the long term, so maybe in a few days I will perk up.

I Finally Took it to the Road!

The hubs surprised us last night and came home from work a few days early. This morning I woke up and figured I should spend some time to myself and run to town and have him pick me up. It worked out perfect! I fianally got off the treadmill!

Man, running downhill is kinda hard! It really works out different muscles. After my hilly descent into town my legs felt like jell-o!

It felt so good to get out and enjoy this gorgeous day. I think I will do this again!

Saturday Eats!

Happy Saturday to you all, I hope you are enjoying your weekend. My daughter and I have been enjoying this lovely sun in our own backyard, but tomorrow we are off to the park. After yesterdays bear sighting, we were pretty loud in our yard. We watered the garden, chased chickens and ducks, and lounged around. Luckily, no bear!

My food intake today is nothing to brag about, but it isn’t horrid either. Here is what I ate today:

Breakfast: toast, 1 slice goat dutch cheese, 1 egg, greek yogurt, and Starbucks iced vanilla latte (freebie from yesterday when they messed up my order)

Snack: banana

About an hour after my snack, I did 3.1 miles on the treadmill in 37:55. I think I am ready to take my daughter with her bike to Birch Bay this week. It is sunny, and I think I need to get off the treadmill for a run.

Lunch: TJ’s Palak Paneer over jasmine rice. So yummy! I could eat this all the time

Snack: Kind Bar Peanut Butter Dark Chocolate

Dinner: 1/2 lb beef patty, 2 slices toast, cheese, 6 cherry tomatoes

Dessert: beer on the porch

For this next week, I don’t really want to use myfitness pal. I know I should, but I feel like I have a pretty good idea of what portions I need to eat, what I need to change, etc…I have planned 2 side dishes that I will cook to accompany some meats. My breakfasts will stay the same, because I am not a big breakfast person and don’t need the variety. My lunches will also stay the same, revolving around leftovers, or a simple veggie with meat. What I will change this upcoming week is my alcohol intake. That is my calorie problem right there! I drink water all day. At night, I just want something else! Maybe I need to try sparkling water or one natural cola to satisfy that craving. I know I also need to add more vegetables, but right now, I don’t want them. I love avocados, brussel sprouts, and much more! I just need simplicity right now.

Well folks, tomorrow is my last fun-filled-food-picture journal! I know, I am sad too. But, I will still post my weekly stats, so don’t fret. I have my shopping list ready for tomorrow, and my motivation in tow. I know this upcoming week will be a success as well…if not better!

Happy First Day of Summer!

Today is the first day of summer, and it feels like it! After many days of clouds and rain we finally have sun. I think it is only one day of sun, but it doesn’t matter. I am parked on the porch getting my vitamin D so I don’t get mistaken as one of the Cullen family members.

It is such a nice day, I really needed this.

So Father’s Day din came out well, I want to tweak the marinade a bit. I also over cooked the meat. I need to get used to the new grill. Our last one was an infared style, so no major flame ups. This new BBQ is  different. I love it, just need to figure it out. After Father’s Day we went camping in eastern Washington in search of sun, but we got wind. We still enjoyed a nice 4 mile hike to look for blue agates.

Morning Jog at the Beach

Good afternoon! It’s been a while, huh? I have been pretty busy, or pretty not busy. The hubs came home Monday night so we have been hanging around the house doing yard work and such. This morning we ventured out to Birch Bay to collect oyster shells for the garden.

While my daughter and husband collected shells, I went for a 2.5 mile run.

I felt really good about my run today. I completed 2.54 miles in 35 minutes. I even stopped a few times to take pictures, and the 35 minutes included my cool down stroll to the beach to meet up with the fam. It was a dreary day, but we still enjoyed it. Anyway, I need a nap! I’m about to become an ornery child, eat glue, and throw crayons if I don’t get a cat nap in. See you after dinner, I am making BBQ chicken pizza!

Ducky Day!

Today was rather blah. I don’t know if it’s the weather or my lack of energy. Maybe I am getting my lack of energy from the dreary weather. Hmph. Who knows. Last night, my daughter asked me if we could make gluten free peanut butter and banana sandwiches for breakfast. Of course, you can’t go wrong with that! I used TJ’s sunflower butter in mine.

So delicious! I enjoyed it, regardless of the messy banana that kept falling out from between the bread. After breakfast, I did my usual rounds of taking care of the dogs, chicks, and ducklings. I enjoy my time outside, it is nice to collect your thoughts and listen to nature. After that, I snacked on a pear, then headed out to my gym to run a few miles on the treadmill.

I was in pretty good spirits, and I think it helped me when I covered the display with a towel. I quit looking at what I was accomplishing and just kept going with the music. I am trying not to get discouraged when I read other blogs about 7-8 minute miles as I know we all have to start somewhere. But right now, I feel like I am not accomplishing anything. After my run, I made lunch, which was a smoked kielbasa and a giant meatball that I made and froze. I think the meatball disagreed with my stomach, because I was off for the rest of the afternoon and had to take a nap to escape the stomach pain. After my nap, my daughter and I went outside to bring out our ducklings, Bluebell and Daffodil.

These two can make any day a good day. They are runner ducks, so they stand like little bowling pins and run around.Actually, we are not sure if Daffodil is a runner, because she doesn’t stand like Bluebell. We’ll see when she gets older. So cute! These two are like peas in a pod, they cannot be separated. After spending some time outside, it was time for dinner. I was excited for dinner because we had Copper River Salmon! I am originally from Alaska, and I love me some Copper River Salmon.

I roasted the salmon with olive oil, salt, and dill, and served it over caramelized onions and wilted kale with balsamic vinegar. Then topped it all off with a mustard/balsamic vinegarette.

This seriously turned out way better than it looks. I really need to take some photography classes. Maybe I will get better over time, right?
